How to make Egg Rice?

Ingredients of  Egg Rice

  • 3 Eggs
  • 3 cloves of Garlic, sliced into small pieces
  • 1/2 inch of ginger, peeled and sliced into small pieces
  • 2 Green chilies, sliced into small pieces
  • One large onion, thinly sliced
  • One carrot, peeled and sliced thin
  • 1.5 cups of pulao basmati rice (washed)
  • 1 tsp turmeric powder
  • 4 tsp garam masala
  • 3 tsp chilly powder
  • salt as per required
  • Chopped coriander leaves

Preparation of Egg rice

Egg RiceStep 1: First boil the eggs, it may take 10-15 minutes to boil. Next peel the eggs make cuts on eggs. Afterwards we have to roast the eggs. To roast the eggs add  oil to the pan and add 1/4 tsp of turmeric powder, 1/4 tsp chilly powder and salt, mix the masala powders on low flame and make sure that they won’t get burnt. Then place the eggs on the pan, flip them after 1 minute and  roast them for 2 minutes. After roasting the eggs keep the eggs aside.

Step 2: Place a cooker on the stove, add 2 tbsp of sunflower oil and let the flame on low and then add sliced ginger, garlic and green chilies saute it. Next add the chopped onion and saute it until they are golden brown in color. Then add carrots and saute them. Afterwards add 1 tsp turmeric powder, 4 tsp garam masala, 3 tsp chilly powder and salt as required to the vegetables, mix well.

Step 3: Afterwards add rinsed and drained 1.5 cups of basmati rice to the cooker and combine them. Next add 2.5 cups of water to the cooker and you can also check if there is a need of salt or not. Then you can add salt if needed. Afterwards close the lid of the cooker and wait till it blows 2 whistles.

Step 4: Finally after some time open the lid of the cooker, then add the roasted eggs. Next add the chopped coriander leaves. Now the egg rice is ready to serve. Additionally you can serve it with the raita.

  • Can use leftover rice to make egg rice.
  • Boil eggs for 10-12 minutes for perfect hardness.
  • Use a rice cooker for quick cooking.
  • Mix in soya sauce or chili flakes.
  • Add chopped nuts like cashews, almonds or seeds like sesame, sunflower.
  • Add black pepper powder for spiciness.
  • To prevent rice from sticking and forming lumps, add 2-3 drops of lemon and oil to the water and cook it.
  • Add crispy fried onions at last after everything is cooked.
  • Garnish with sliced boiled eggs.
  • Serve with a side of chili sauce or raita.
